Yesterday, my family - my whole family (except Bret and some members of the Conner family) - got together for Micah's fourth birthday celebration - AND to exchange a grand total of 66 casseroles.
Rachel thought of this idea before Christmas. Basically, one hard night of lots of cooking the same thing and finding freezer space, then SEVERAL weeks of lovely meals without any trouble. Yea!! We all got together at Rachel's house for baked potatoes followed by Monster's vs. Aliens birthday cake and ice cream - and of course... PRESENTS!! You may see some of these same pictures on Rachel's blog, but we ARE in the same family and attend the same family events. crazy, i know. (Yes, the second picture is four adult men watching Dora the Explorer. My Dad, Robert, Ira, and Chris - if you know them, give them a hard time.)After playing with all the fun new toys, it was time to organize the stacks of casseroles, making sure each person got the right number of the right kind of food. So, what was on the menu? Just to make you a little hungry, here it is: Broccoli, Rice, Cheese Casserole; Lasagna; Chicken and Squash Casserole; Noodle Spinach Casserole; Meaty Ravioli Casserole; and Blackeyed Pea Skillet. Most of the veggies and meat in these casseroles came from my daddy's chickens or his garden. God is good! - and Dad is a good cultivator of his blessings!! And mom included fresh homemade honey wheat bread with her meal - most of you who read this know my parents and so you already know this: My parents are awesome!
